Baked Sweet Potatoes & Apples

Makes 10, 1 cup servings

Ingredients

vegetable cooking spray
5 sweet potatoes
3 apples
1 can (15 ounces) pineapple chunks, drained
⅓ cup brown sugar

Directions

  1. In a large saucepan, cook potatoes in water until tender. Drain, peel and cut into ½ inch slices.
  2. Peel apples and slice. 
  3. Preheat oven to 325°.
  4. Spray a 9x13 pan or one of similar size with vegetable cooking spray. 
  5. Layer sweet potatoes, apples, pineapple and brown sugar in baking pan.  Cover with foil.
  6. Bake for 45 minutes.

Tip

Try store brands when buying canned fruits.  They cost less and often taste the same as more expensive brands.
