Stuffed Peppers

Makes 4 servings

Ingredients

vegetable cooking spray
1 medium onion, chopped
3 cups cooked brown instant rice
1 can (15 ounces) diced tomatoes
1 can (15 ounces) black beans, rinsed and drained
4 large green peppers
1 cup grated low-moisture part-skim mozzarella cheese
½ cup water

Directions

  1. Preheat oven to 350°. 
  2. Spray a 9x13 pan or pan of similar size with vegetable cooking spray.
  3. In a large bowl, mix rice, onion, tomatoes and beans.  Set aside.
  4. Wash peppers well.  Cut tops off peppers remove seeds from inside. 
  5. Pour ½ cup water in the pan. 
  6. Fill peppers with rice mixture and place in pan. 
  7. Sprinkle shredded cheese on the pepper tops.
  8. Bake for 30-40 minutes or until peppers are tender.

Tip

Brown rice is high in fiber and a healthy choice.  If you do not have brown rice you can use white rice instead.
