Baked Salmon with Tomatoes, Spinach & Mushrooms

Makes 4 servings

Ingredients

vegetable oil spray
4 four-ounce salmon fillets
2 cups chopped fresh spinach
1 cup sliced mushrooms
1 medium tomato, chopped
⅓ cup Italian Dressing

Directions

  1. Spray 13 x 9-inch baking dish with vegetable oil spray.
  2. Place salmon fillets, skin side down in baking dish.
  3. Mix remaining ingredients together. Spoon over salmon.
  4. Bake at 375° for 20-25 minutes or until salmon flakes easily when tested with fork.
