Ingredients
½ cup reduced-fat Bisquick mix
2 eggs or 4 egg whites or ½ cup egg substitute
¾ cup sugar
1 ½ cups canned pumpkin
2 teaspoons pumpkin pie spice (or 1 teaspoon cinnamon, ½ teaspoon ginger, ¼ teaspoon cloves and ¼ teaspoon nutmeg)
¼ teaspoon salt
1 can (12 ounces) fat-free evaporated milk
vegetable oil spray
Directions
- Preheat oven to 350°.
- Mix all ingredients in a blender or food processor for 2 minutes.
- Spray a 10-inch pie plate with vegetable oil spray. Pour the pumpkin mixture into the pan.
- Bake for 40 or 50 minutes, or until a knife inserted in the center comes out clean.
- Cool completely before cutting.
