Chicken and Black Beans

Makes 6 servings

Ingredients

2 pounds cut up chicken, without skin
¼ cup oil
1 onion, chopped
1 green pepper, chopped
2 cloves garlic, chopped (or ½ teaspoon garlic powder)
1 can diced tomatoes (Try no salt added or with added jalapeno peppers)
15 oz can black beans, rinsed and drained
Rice, noodles or cornbread

Directions

  1. Put oil in skillet and brown chicken pieces.
  2. Remove chicken and set aside.
  3. Cook onion, pepper and garlic in skillet. Add tomatoes and beans.
  4. Return chicken to pan, cover and cook until chicken is tender.

Tips

  • Serve chicken and black beans with leftover rice or noodles.
  • Buy chicken on sale and freeze for use later.  Thaw chicken in the refrigerator or in a sink of cold water. Change the water every 30 minutes so it remains cold.
