Ingredients
2 pounds cut up chicken, without skin
¼ cup oil
1 onion, chopped
1 green pepper, chopped
2 cloves garlic, chopped (or ½ teaspoon garlic powder)
1 can diced tomatoes (Try no salt added or with added jalapeno peppers)
15 oz can black beans, rinsed and drained
Rice, noodles or cornbread
Directions
- Put oil in skillet and brown chicken pieces.
- Remove chicken and set aside.
- Cook onion, pepper and garlic in skillet. Add tomatoes and beans.
- Return chicken to pan, cover and cook until chicken is tender.
Tips
- Serve chicken and black beans with leftover rice or noodles.
- Buy chicken on sale and freeze for use later. Thaw chicken in the refrigerator or in a sink of cold water. Change the water every 30 minutes so it remains cold.
