Garden Frittata

Makes 2 servings
 
Ingredients

1 cup frozen mixed vegetables  
Nonstick cooking spray
½ cup shredded mozzarella or cheddar cheese
1 cup salsa
2 eggs
1 tablespoon low-fat milk
½ teaspoon garlic powder
¼ teaspoon salt
½ teaspoon pepper
2 tablespoons Parmesan cheese

Directions

  1. Cook vegetables in microwave on high for 2-3 minutes or until warm.  Drain.
  2. Spray pie plate or other shallow baking dish with nonstick cooking spray.
  3. Pour vegetables into pie plate and top with cheese and salsa.
  4. Beat eggs, milk, and spices together.
  5. Pour egg mixture over the vegetables, cheese and salsa.
  6. Cook in microwave on high for 3-4 minutes or until the eggs are firm.
  7. Sprinkle with Parmesan cheese.
