| Dressing Ingredients
3 tablespoons cider vinegar
½ teaspoon salt
½ teaspoon black pepper
3 tablespoons olive oil
Salad Ingredients
1 can (15 ounces) yellow or white corn, drained
1 can (15 ounces) cut green beans, drained
1 small red onion, finely chopped
Directions
- Blend together all dressing ingredients.
- Mix together all the vegetables.
- Toss vegetables with the dressing.
- Chill and serve.
Tip
Canned vegetables are a good choice in the winter. Rinse and drain canned vegetables to decrease the amount of salt.
