Vegetable Ramen Noodle Stir Fry

Makes 4 servings

Ingredients

2 packages of Chicken Ramen Noodles
1 tablespoon cooking oil (try canola oil)
¾ pound sliced chicken (legs or breast without skin and bones)
½ bag of frozen vegetables
1 ½ tablespoons lemon juice or water

Directions

  1. Cook the noodles in boiling water for 3 minutes. Rinse with cold water and drain.  Set aside. 
  2. Heat oil in skillet.  Fry meat until chicken is browned and no longer pink inside. 
  3. Add the vegetables and heat for 2 minutes.
  4. Add the cooked noodles, seasonings from the flavor packet and lemon juice or water.
  5. Stir and heat.  

Tips

  • Use leftover chicken, ham or turkey for the stir fry.
  • Use only one season packet instead of 2 to lower the amount of salt.
  • Any packaged rice or noodle packet can be turned into a meal by adding vegetables, beans or meat.
