Cranberry Apple Crunch

Makes 12, ¾ cup servings

Ingredients

vegetable cooking spray
6 large apples
1 can (16 ounces) whole cranberry sauce
1 cup raisins
1½ cups oatmeal
½ cup brown sugar
1 teaspoon cinnamon
2 tablespoons melted butter or margarine

Directions

  1. Preheat oven to 400°. 
  2. Spray a 9x13 baking pan or one of similar size with vegetable cooking spray.
  3. Wash apples, remove cores and thinly slice with the peel on. 
  4. In a bowl, combine apples, cranberry sauce, and raisins. Pour into baking pan. 
  5. Combine oatmeal, brown sugar, cinnamon and butter.  Sprinkle over fruit. 
  6. Cover pan with foil and bake for 20 minutes.
  7. Uncover and bake 15 more minutes until the topping is crisp and apples are tender.

Tip

Buy apples in the fall when flavor is high and cost is low.
