Oven-Roasted Vegetables

Makes 5, ¾ cup servings  

Suggested Vegetables
               
Most vegetables taste great oven-roasted.  Use your favorites or follow our suggestions.

2 onions, sliced
1 small zucchini, sliced
1 green pepper, sliced
1 red pepper, sliced
1 cup asparagus, cut into 1-inch pieces
1 small yellow squash, sliced
1 cup fresh green beans, snapped into 1 inch pieces
2 carrots, sliced thin
1 cup mushrooms, halved

Seasoning Ingredients

2 tablespoons olive oil
4 tablespoons vinegar
½ teaspoon garlic powder
1 teaspoon basil
½ teaspoon oregano
½ teaspoon pepper

Directions

  1. Preheat oven to 425°. 
  2. Place all ingredients in a 9 x 13 inch baking dish or a pan of similar size. 
  3. Toss vegetables to coat completely with seasonings and oil.
  4. Cover and bake with foil for 40 minutes or until tender.

Tip

Vegetables taste even better when they are oven roasted.  Choose veggies in season to keep costs down.
