Suggested Vegetables
Most vegetables taste great oven-roasted. Use your favorites or follow our suggestions.
2 onions, sliced
1 small zucchini, sliced
1 green pepper, sliced
1 red pepper, sliced
1 cup asparagus, cut into 1-inch pieces
1 small yellow squash, sliced
1 cup fresh green beans, snapped into 1 inch pieces
2 carrots, sliced thin
1 cup mushrooms, halved
Seasoning Ingredients
2 tablespoons olive oil
4 tablespoons vinegar
½ teaspoon garlic powder
1 teaspoon basil
½ teaspoon oregano
½ teaspoon pepper
Directions
- Preheat oven to 425°.
- Place all ingredients in a 9 x 13 inch baking dish or a pan of similar size.
- Toss vegetables to coat completely with seasonings and oil.
- Cover and bake with foil for 40 minutes or until tender.
Tip
Vegetables taste even better when they are oven roasted. Choose veggies in season to keep costs down.
