Baked Apples and Sweet Potatoes

Ingredients: 

3 apples, washed
5 sweet potatoes, washed
Vegetable oil spray
1 15-ounce can of pineapple chunks, packed in 100% juice
1/3 cup brown sugar
1 Tablespoon cinnamon
 




Directions: 
  1. Preheat oven to 375 degrees.
  2. Peel and slice sweet potatoes and apples.
  3. Spray a large baking dish with vegetable oil spray.
  4. Combine sweet potatoes, apples, pineapple, and brown sugar in baking pan. Add a small amount of pineapple juice if additional liquid is needed.
  5. Sprinkle with cinnamon.
  6. Cover with foil.
  7. Bake for 45 minutes - 1 hour.
