Baked Fish with Tomatoes, Greens, and Mushrooms

Ingredients:
Vegetable oil spray
4 fish fillets (4 ounces each)
2 cups fresh spinach or Swiss chard, washed, and chopped
1 cup fresh mushrooms, washed and sliced (or canned mushrooms, drained)
1 medium tomato, washed and chopped
⅓ cup low-fat Italian dressing
Directions:
- Spray 13 x 9-inch baking dish with vegetable oil spray.
- Place fish fillets in baking dish.
- Mix remaining ingredients in a bowl until well blended.
- Spoon mixture over fish.
- Bake at 375 degrees for 20-25 minutes, or until fish flakes easily when tested with fork.
